Ingredients

  • 4 cups cranberry juice Chilled to create the ruby base and add tart fruit flavor.
  • 2 cups pineapple juice Chilled for sweetness and tropical balance.
  • 1 cup orange juice Fresh chilled juice that adds citrus notes.
  • 4 cups lemon lime soda Cold and carbonated to create a sparkling finish.
  • 2 quarts lime sherbet Frozen scoops added to create creamy swirls as it melts.
  • 1 cup fresh cranberries Added whole for bright color and seasonal decoration.
  • 1 medium orange Sliced into rounds for fresh citrus aroma and garnish.

Method

  1. Pour 4 cups cranberry juice, 2 cups pineapple juice and 1 cup orange juice into a large clear glass mixing bowl. Stir slowly with a long spoon in a circular motion for 60 seconds at 40°F because the cold temperature keeps the flavors fresh. Add the chilled ingredients together evenly. Short step. You’ll see the juices blend into a deep ruby color with a smooth surface and fresh citrus smell. Miss this cold mixing window and the drink warms too fast before the sherbet is added. Mix at 40°F for 60 seconds because cold juice keeps the punch crisp.

  2. Add 4 cups lemon lime soda slowly into the juice mixture at 38°F over 30 seconds while stirring with a gentle folding motion. Keep the bubbles intact by moving the spoon around the edge instead of beating the center. (I tested faster stirring first and the fizz vanished before serving. Slow mixing kept the sparkle.) The drink should become lighter in color with tiny bubbles moving through the surface. Go past 30 seconds of rough stirring and the carbonation fades. Slow folding protects the bubbles and keeps the drink lively.

  3. Place 2 quarts lime sherbet scoops gently into the chilled punch at 36°F and let them float for 5 minutes without pressing them down. Use a smooth scoop motion so the sherbet keeps its round shape while slowly melting into the drink. The texture changes gradually. The sherbet forms creamy green-white islands with soft edges and sweet citrus smell. Rush this step and the sherbet melts too quickly, making the punch flat. A slow melt creates the creamy foam layer guests expect.

  4. Add 1 cup fresh cranberries and 1 medium orange sliced into rounds at 36°F after the sherbet has rested for 5 minutes. Fold the fruit gently through the surface using a slow scoop motion and leave some sherbet pieces visible. (My first batch used warm fruit and the sherbet disappeared fast. Cold fruit fixed the texture.) The finished punch has uneven creamy swirls, floating fruit pieces and a bright holiday color. Wait too long and the fruit loses its fresh bite. Serve cold because the sherbet texture depends on steady chilling.

Notes

Keep leftover punch in a sealed glass pitcher for up to 2 days in the refrigerator at 40°F or below. Freezing isn't recommended because the soda loses carbonation and the sherbet texture separates after thawing. Don't reheat this drink. If the mixture separates, chill it for 30 minutes and gently stir before serving. Discard it if you notice sour smells, unusual foam or a slimy texture.
