Pumpkin Cream Cheese Muffins

This is the kind of thing I wish I’d learned sooner. The first time I made these was for Thanksgiving 2020, when we couldn’t travel, and I overbaked them by almost 8 minutes. They were still the best part of brunch somehow. That’s when I realized this recipe is far more forgiving than most people
