Refrigerate leftovers within 2 hours. Place the Brie and topping in a shallow airtight container and keep them for up to 3 days. Store the water crackers separately so they stay crisp. Freezing isn’t recommended because thawed Brie becomes grainy and the apple topping releases water. If freezing is unavoidable, wrap the cooled cheese tightly and freeze it for 1 month. Thaw it overnight in the refrigerator. Reheat one portion at 300°F for 8 to 10 minutes, then add 1 tablespoon of reserved topping. A whole remaining wheel needs 12 to 15 minutes at the same temperature. Don’t microwave longer than 15 seconds per burst because the rind can rupture. Discard leftovers with a sharp ammonia smell, visible mold beyond the normal white rind, or watery gray patches. When uncertain, throw them away.
