Refrigerate fully cooled cookies in a rigid airtight container for up to 7 days. Place parchment between layers so the white chocolate chips don't stick. For softer texture, thaw wrapped cookies at room temperature for 45 minutes. Reheat one cookie at 300°F for 4 to 5 minutes or microwave it for 8 to 10 seconds. Let it rest for 2 minutes before eating because the white chocolate can become very hot. Discard cookies with a sour smell or visible moisture beads.
