Crockpot Ham and Bean Soup

Ingredients

  • 3 cans, 15.5 ounces each great northern beans Drain and rinse well. One can thickens the broth early and two cans go in near the end.
  • 1 bone, about 1.5 pounds smoked ham bone Use one with some meat attached because it seasons the broth during the long slow cook.
  • 2 cups cooked smoked ham Cut into irregular 1/2-inch cubes and add near the end so it stays tender.
  • 4 cups low-sodium chicken broth Use low-sodium broth because the smoked ham bone contributes substantial salt.
  • 2 cups water Dilutes the broth enough for the ham bone and beans to season it gradually.

Instructions

  • Dice the yellow onion and celery into roughly 1/4-inch pieces. Cut the carrots into 1/2-inch pieces and mince the garlic. Then drain and rinse all three cans of great northern beans for about 30 seconds. Keep the smoked ham bone and diced cooked ham refrigerated at 40°F or colder during this 10 to 12 minute prep window. The vegetables should look irregular but close enough in size to soften together. The rinsing water should run mostly clear and the beans shouldn't feel slick from canned liquid. If the carrots stay much larger than 1/2 inch, they can remain firm after the broth is finished. Uniform cuts soften at the same rate, so the broth stays balanced.

  • Add the smoked ham bone, chopped onion, carrots, celery and garlic to a 6-quart slow cooker. Pour in 4 cups low-sodium chicken broth and 2 cups water. Add one can worth of rinsed great northern beans with thyme, bay leaf, smoked paprika and black pepper. Set the cooker to LOW for 5 hours and stir once after hour 3. By hour 5, the liquid should hold around 190°F to 200°F and smell noticeably smoky. The onions turn translucent while the carrots begin softening around their edges.   • Continue cooking on LOW for another 60 to 90 minutes without lifting the lid repeatedly. The soup should stay near 190°F to 200°F with only gentle movement around the edges. Then press about 1/2 cup of the softened beans against the side and stir them back into the broth. Use several firm strokes rather than mashing the whole batch. The broth should shift from thin and clear to slightly cloudy and velvety. Carrots should yield when pressed but still hold irregular pieces. You'll smell deeper smoked ham and thyme as the bean starch disperses. (My first batch stayed watery because I skipped this small mash, this fixed it.)   • Lift out the ham bone after 6 to 6 1/2 hours on LOW. Let it cool for 5 minutes and pull off any tender meat. Discard the bone and visible tough connective tissue. Return the shredded ham to the cooker. Then add the remaining two cans of rinsed great northern beans and 2 cups diced cooked ham. Stir from bottom to top three or four times.   • Turn the slow cooker to WARM and stir in 1 tablespoon apple cider vinegar. Taste after 2 minutes and add up to 1/2 teaspoon kosher salt only if needed. Remove the bay leaf. Notes
