Ingredients
Method
- Cut 2 cups butternut squash cubes and 1 cup yellow onion into uneven pieces, then combine them with 1 1/2 pounds boneless chicken breast cubes in a bowl. Work at 375°F in the oven later and keep the mixture chilled for 10 minutes before assembly. Toss with 2 tablespoons olive oil using a folding motion with a spatula, turning from the bottom upward. (I tried adding all the cheese early once and the top became too heavy.) The chicken should look pale pink and the vegetables should have a fresh orange and white color. You'll smell the thyme as it coats the pieces. Skip the short chill and the layers can release extra moisture. Mixing first keeps the flavors balanced.

- Spread the chicken mixture into a 9x13 baking dish and add 1 cup cream sauce over the surface. Sprinkle 1 cup sharp cheddar evenly but naturally over the top, then bake at 375°F for 25 to 30 minutes. Press the layers gently with a spatula so they connect without becoming packed. You'll know the first stage is right when the edges begin bubbling and the cheese starts melting. The center should still look moist and the top should have small melted patches. Watch closely because extra time dries the chicken. (My first batch stayed too loose because I rushed the layering.) Bake at 375°F and layer evenly, because structure keeps the casserole moist.

- Bake the assembled casserole at 375°F for 25 to 30 minutes until the chicken reaches 165°F inside. Rotate the dish halfway through at minute 15 if your oven heats unevenly, then check the center with a thermometer. You'll see melted sharp cheddar with golden spots and hear gentle bubbling around the edges. The aroma changes when the herbs warm through. Miss this window and the vegetables can become soft without enough texture. This stage matters.

- Remove the casserole after baking and rest it at room temperature for 10 minutes before serving. Scoop one portion carefully and place it on a plate while keeping the layers together. Use a gentle lifting motion so the chicken, vegetables and cheese remain visible. The top should stay golden and the inside should look creamy with soft vegetable pieces. Cutting too soon makes the sauce run out. Resting 10 minutes helps the layers hold their shape.

Notes
Keep leftovers in a sealed container in the refrigerator for up to 4 days. You can freeze the casserole for 3 months when wrapped tightly with foil and placed in a freezer-safe container. Reheat individual portions at 350°F for 20 minutes and add 1 tablespoon of cream sauce if the texture seems dry. Discard it if you notice sour smells, mold, or a slimy surface.
