These pumpkin cream cheese muffins are one of my favorite easy fall dessert ideas when I want something cozy without a fussy process. The quick batter stays soft and warmly spiced while the cream cheese center turns smooth and tangy. The simple trick is filling each cup halfway before adding the center, so every bite has pumpkin and cream cheese. They're the best kind of healthy-ish treat for brunch, a holiday potluck or a Search focus: fall desserts with cream cheese.

  • 8 ounces full-fat block cream cheese Soften to about 68°F to 72°F before mixing so the filling becomes smooth without turning runny.

Instructions

  • Bring the full-fat cream cheese and egg yolk to 68°F to 72°F before mixing. Beat the cream cheese with 1/4 cup granulated sugar for 90 seconds. Add the egg yolk and 1/2 teaspoon pure vanilla extract. Then beat another 30 seconds and scrape down the mixture once. Stop as soon as it turns thick and smooth. Overbeating for several minutes can make the filling loose. The mixture should look creamy and hold a soft ridge instead of flowing flat. You shouldn't see cream cheese lumps larger than a pea. If the cheese is colder than 65°F, those lumps usually remain. And if it gets too warm, the filling spreads into the pumpkin batter instead of forming a clear center. Mix briefly at room temperature because a thick filling stays distinct during baking.

  • Keep the eggs and pumpkin puree near 68°F to 72°F. Whisk the all-purpose flour with pumpkin pie spice, ground cinnamon, baking soda and fine sea salt for 30 seconds. In the same preparation period, combine pumpkin puree with 3/4 cup granulated sugar, light brown sugar, 2 large eggs, neutral vegetable oil and 1 teaspoon vanilla. Fold the dry mixture into the wet mixture for 45 to 60 seconds. Use broad folding motions and stop when only two or three tiny flour streaks remain. The batter should look thick and deep orange with a slightly glossy surface. Fall Desserts with Cream Cheese turn heavy when the batter gets aggressively beaten after the flour enters. Go past about 90 seconds and excess gluten can make the muffins rubbery. Fold briefly because limited gluten development keeps the pumpkin crumb tender.

  • Keep both mixtures near 68°F to 72°F while assembling. Divide half the pumpkin batter among 12 muffin cups. Add about 1 tablespoon cream cheese filling to each center. Then cover the edges with the remaining pumpkin batter while leaving part of each white center exposed. Make one shallow circular pass through each center. Finish all 12 cups within 5 to 7 minutes so the batter doesn't sit too long. The cups should look uneven rather than identical. Orange batter should surround each ivory center while a few white streaks feather into the pumpkin surface. Fall Desserts with Cream Cheese lose their defined centers when you swirl repeatedly. More than two turns blends the filling into the batter and removes the contrast. Keep the swirl shallow because distinct layers create the creamy center after baking.

  • Bake the 12 muffins in a 350°F preheated oven for 18 to 22 minutes. Keep them on the center rack and rotate the pan once at minute 12 if your oven browns unevenly. Don't open the oven before minute 15. Start checking at minute 18. The pumpkin crumb should reach about 200°F to 205°F away from the cream cheese center before you remove the pan. The orange tops should rise around the creamy centers and develop irregular golden-brown edges. The cream cheese should look set but remain pale ivory. You'll smell cinnamon and pumpkin spice more strongly near minute 18. Fall Desserts with Cream Cheese can dry out if they stay past about 22 minutes.   • Leave the muffins in the pan for exactly 10 minutes after baking. Then move them out and cool another 20 to 30 minutes. Wait until the centers fall below about 90°F before splitting one open. Pull the paper away gently and break the muffin through its center instead of crushing the top. Cutting too early smears the hot filling through the crumb. The finished muffin should have a moist orange interior and a distinct creamy white center. The outer edge feels softly springy while the middle stays tender. Notes

Store the cooled muffins in a single layer inside an airtight container in the refrigerator for up to 5 days. Place a paper towel above and below the muffins to absorb extra moisture. Freeze individually wrapped muffins for up to 2 months, then thaw overnight in the refrigerator before serving. For the best texture, let refrigerated muffins sit at room temperature for 20 to 30 minutes before eating. If you prefer them slightly warm, heat them at 300°F for 5 to 6 minutes. Don't microwave for too long because the cream cheese center can become runny. Discard the muffins if the filling develops a sour smell or visible mold.
