Ingredients
Method
- Combine 3 cups all-purpose flour, 1 teaspoon baking soda, 1 tablespoon ground ginger, 1 teaspoon ground cinnamon, 1/4 teaspoon ground cloves and 1/2 teaspoon fine sea salt with 3/4 cup unsalted butter, 3/4 cup dark brown sugar, 1 large egg, 1/2 cup molasses and 2 teaspoons vanilla extract. Work at room temperature for 15 minutes and scrape the bowl down halfway with a spatula until the dough becomes smooth and dark. (I tested a shorter mix once and the spices stayed uneven throughout the cookies.) You'll see a thick dough with a glossy molasses color and a warm spice smell after mixing. Don't overwork it because the cookies can turn firm instead of tender. Mix 15 minutes at room temperature so the flour hydrates evenly and the dough structure stays balanced.

- Chill the dough for 60 minutes at 40°F before rolling it between sheets until it reaches 1/4 inch thickness. Press the gingerbread man cutter firmly into the dough and move the shapes onto the tray with a thin spatula. Keep the motion gentle because stretched dough loses its shape during baking. The cut cookies should look smooth with clear edges and a slightly firm surface. Skip the chill and the shapes spread more than expected. Chill 60 minutes before cutting so the butter firms and the silhouettes stay defined.

- Bake the shaped cookies at 350°F for 10 to 12 minutes until the edges set while the centers remain slightly soft. Rotate the tray halfway through and watch the surface as the cookies puff slightly. (My first batch baked 14 minutes and the centers became too dry. The shorter window fixed the texture.) The cookies will smell like ginger and caramelized molasses when they are ready. You'll notice firmer edges and soft centers. Go past 12 minutes and they lose the chewy middle. Bake at 350°F for 10 to 12 minutes because gentle heat keeps the centers tender.

- Cool the cookies completely for 30 minutes at room temperature, then add icing details using 1 cup powdered sugar mixed with 2 tablespoons milk. Pipe simple lines and dots with a steady hand motion while keeping some cookies plain for contrast. Spread decorations naturally instead of making every cookie identical. The icing should look smooth and slightly firm after 20 minutes. The decorated gingerbread cookies have playful details and homemade variation. Wait until fully cool so the icing sets and does not melt into the cookie surface.

Notes
Keep the cookies in an airtight container for up to 7 days at room temperature. Freeze undecorated or decorated cookies for up to 3 months by wrapping layers separately in parchment and placing them in a freezer bag. Warm frozen cookies for 3 minutes in a 250°F oven if you want a softer texture. Discard cookies with unusual moisture, mold spots or a sour smell.
