Instructions

  • Preheat the oven to 350°F. Heat the oven to 350°F and slice four Honeycrisp apples into roughly 1/3-inch wedges. Toss them with 1 tablespoon lemon juice and 1 teaspoon ground cinnamon for 60 to 90 seconds. Use your hands to lift and turn the slices from the bottom so every surface gets lightly coated. Keep the slices irregular instead of trimming them into identical pieces. The apples should look glossy and lightly speckled with cinnamon after about 90 seconds. You’ll smell fresh apple first and then warm cinnamon as the coating spreads. Don’t let the sliced apples sit longer than 15 minutes before assembling because they’ll release extra juice. Coat evenly and move on quickly because controlled moisture keeps the filling tender instead of watery.

  • Bake the assembled crisp at 350°F for 28 to 32 minutes on the center rack. At minute 25, look through the oven door instead of opening it repeatedly. The apple juices should bubble at several edges and the oat clusters should deepen from beige to golden brown. Rotate the dish once at minute 20 only if your oven browns unevenly. You’ll smell toasted oats and cinnamon when the crisp reaches the final 3 to 5 minutes. The apple wedges should yield when pierced but still hold recognizable shapes. (I tried 375°F first, the topping darkened before the thickest apples softened. 350°F fixed it.) Go much past 35 minutes and the exposed oats can taste bitter. Bake gently because the apples need time to soften before the maple sugars overbrown.

  • Rest the baked crisp for 12 to 15 minutes at room temperature before serving. Spoon one quarter into a small cream serving bowl while keeping visible apple wedges and crisp clusters together. Add 2 tablespoons plain whole-milk Greek yogurt slightly off-center. Let the yogurt soften against the warm topping for about 1 minute without stirring it into the fruit. Notes
