Ingredients
Method
- Season 1 pound boneless chicken breast with spices, then combine it with diced vegetables, yellow corn kernels, canned white beans and chicken broth in a large pot. Work over medium heat about 5 on a 10-dial for 8 to 10 minutes while stirring with a wooden spoon in slow circles. (I tested a hotter start once and the chicken tightened before the broth could carry flavor.) The mixture should look pale with bright corn and pepper pieces spread throughout. You'll smell the cumin first and see the broth begin to blend. Miss this timing and the flavors stay flat. Medium heat for 10 minutes lets the aromatics release their oils evenly.

- Simmer the combined chili at medium-low heat about 3 on a 10-dial for 20 to 25 minutes. Stir every 5 minutes by scraping the bottom and folding the chicken through the broth so the flavors spread. Keep the pot uncovered during the last 5 minutes so the liquid starts to thicken. You don't want a rushed boil. The broth turns slightly creamy and the chicken becomes tender enough to shred easily. You'll notice small bubbles around the edges and a sweet corn smell. Go past this stage too long and the chicken can dry out. Slow simmering at medium-low heat softens the beans and builds the chili texture.

- Lower the heat to medium-low and stir in cream cheese, sour cream, shredded Monterey Jack cheese and lime juice for 3 to 5 minutes. Fold with a spoon until the dairy melts into the broth and the surface becomes smooth. Use gentle strokes because fast stirring can break the creamy texture. The chili changes from a thin broth to a rich white sauce with melted cheese strands. You'll see a glossy finish and smell the fresh lime. Skip this window and the cheese may clump. Warm dairy slowly at medium-low heat so the sauce stays smooth.

- Ladle the finished chili after resting it off the heat for 5 minutes. Add cilantro, extra corn kernels and a sprinkle of cotija cheese with a gentle topping motion. Use a serving spoon to keep the chicken and broth together while creating a natural uneven finish. The bowl should show creamy broth, tender chicken and colorful toppings with casual homemade texture. You'll see melted cheese pockets and smell the lime and herbs. Don't rush the rest. Resting for 5 minutes helps the creamy base settle without separating.

Notes
Keep Mexican Street Corn White Chicken Chili in sealed glass containers for up to 4 days in the refrigerator. Freeze portions for up to 3 months and thaw overnight before reheating. Warm leftovers at medium-low heat for 10 to 15 minutes and add 2 tablespoons of broth if the texture thickens too much. Discard it if you notice sour smells, unusual texture, or mold.
