(I tried using soft sandwich bread the first time I made this and it turned completely soggy under the yogurt, sourdough is definitely the fix.) Toast at medium-high for 3 minutes so the sturdy crust creates an instant barrier against moisture.

  • Combine 0.5 cups of whole milk Greek yogurt with 1 tablespoon of clover honey in a small bowl. Stir vigorously with a spoon for 45 seconds until the mixture becomes completely smooth and glossy. The yogurt will loosen slightly and take on a soft cream color with an airy texture. You should see soft peaks form as you lift the spoon from the bowl. Mix vigorously for 45 seconds, whipping incorporates air which makes the cold spread light and pillowy.

  • Spoon the whipped honey yogurt onto the warm toasted sourdough slice. Spread it evenly using the back of a spoon to create an edge-to-edge layer about half an inch deep. Leave a narrow quarter-inch border of golden crust exposed around the outer edges. The cold yogurt creates a gorgeous contrast against the warm toasted bread surface. Spread generously over warm toast, the heat softens the bottom layer of yogurt so it adheres tightly.
