Store the jam and whipped ricotta separately in airtight containers at 40°F or colder. The jam keeps for 7 days, while the ricotta keeps for 3 days. Keep toasted bread at room temperature for up to 8 hours in a loosely closed container. Freeze only the jam for 2 months and leave 1/2 inch headspace. Don’t freeze assembled toast because the bread turns soggy and the ricotta can separate. Recrisp plain toast at 350°F for 5 to 7 minutes, then cool it for 2 minutes before topping. Don’t heat the ricotta or assembled toast. Add 1 teaspoon cold cream and stir gently if the ricotta tightens in the fridge. Discard jam with bubbles, mold or a fermented smell. Discard ricotta if it smells sour, releases yellow liquid or feels slimy.
